KNYSNA NEWS - Patrick Sibeko of the Featherbed Company shucked his way to the top prize at the Knysna Oyster Festival cooking and shucking competition on Tuesday evening, 8 July.
He presented judges Keith Davis and Andrew Korki with 12 perfect oysters in one minute.
Patrick worked for the Knysna Oyster company between 1995 and 2013 – before joining the Featherbed Company where he is now kitchen manager.
Patrick showed that, even though he has other duties, he can still expertly shuck an oyster.
His trick: "I open them from the hinge, so that the shells don't break, not like the others who open an oyster from the mouth."

Criteria
He estimates he has, over the years, shucked more than a million oysters.
The judging criteria were for a clean, open oyster, with no shell inside the opened oyster.
Also, that no flesh is left on the shell.
The winners of the best-dressed stand was Featherbed Company.
The best-dressed oyster was produced by Simola, with Butterfly Blue second and 34 De-grees South third.
